Wow. This might be the best wine we have ever made. Lifted floral aromas give way to silky smooth mouthfeel and flavors of fresh picked wild berries, licorice and underripe plum in this unique take on California Zinfandel. Bottled unfined and unfiltered after 11 months aging in old French Oak barrels. Drink on it's own or pair with just about anything, including turkey, pork, BBQ chicken, and vegetables reduced in red wine or balsamic sauces.
We took about 20% of this Zinfandel and dumped the whole clusters into big T-bin fermenters before destemming the remaining grapes over the top. The Zinfandel then underwent a two week native open-air fermentation before being pressed off into old French Oak barrels, where it aged for 11 months before being bottled unfined and unfiltered.
