A fresh,
acid-driven white wine reminiscent of Chardonnay, but without all the
buttery notes. Our Chenin Blanc features aromas and flavors of yellow
apple, lemon verbena, apricot, ginger spice, and a bright, zippy finish. Drink on its own or pair with chicken, pork, and cow cheeses such as gruyere, triple cream brie, or cheddar.
Clarksburg AVA The Clarksburg viticultural area lies just
south of Sacramento alongside the Sacramento river which acts as a night
time temperature regulator in this hot daytime region. The sandy,
alluvial soils of the region and cooling river influence have many
likening Clarksburg to the Loire region of France, making it a perfect area to
grow Chenin Blanc in California.
WINEMAKING We destemmed and pressed off the Chenin Blanc, 50% into stainless steel tanks and 50% into old French Oak barrels where it fermented separately. After alcoholic fermentation, we blended the juice together and aged it in neutral barrels for 8 months before bottling it unfinded and unfiltered.
